Zucchini and Yellow Squash
Zucchini and summer squash are a very versatile summer favorite. In addition to the green zucchini and yellow summer squash, you’ll also get a green and yellow variety called Zephyr. This squash has a pleasing sweet and nutty flavor.
Storage and Handling:
Store Zucchini and Summer Squash in a loosely closed or perforated plastic bag for up to a week and a half. Rinse them in cold water before using.
Culinary Uses:
Zucchini and Summer Squash can be sliced raw into salads; sautéed; roasted; grilled; braised; added to soup and stews; made into sweet breads, cakes, and muffins; stuffed; breaded and fried; and made into zucchini or summer squash parmesan.
